Lactic acid bacteria are a heterogeneous group of anaerobic, but usually aerotolerant bacteria, all able to ferment glucose to lactic acid.

Although lactic acid bacteria play an important role in the production of foods, the metabolites of some representatives are unwanted in products from the beverages industry since they lead to off-flavours and spoilage. Routine tests for lactic acid bacteria in the production processes thus play an importanr role.
